A Taste of Elegance, Wherever You Are
Wagyu Tataki Recipe
INGREDIENTS:

‍8oz Wagyu (I used Denver cut, you can use any similar)
1/2 tsp cracked salt & pepper
1 1/2 tbsp sesame oil
1 tsp fish sauce
3 tbsp rice vinegar
1 tbsp sweet chili sauce
1 to 2 tsp Gochujang (depends hot spicy you like it)
1/2 lemon juice
2 tsp reduced soy (or 3tsp tamari)
1 garlic clove (minced)
1 tsp grated ginger
Handful thinly sliced green onion(scallion) 1/2 cup quinoa
1 cup water
1 tbsp olive oil

‍DIRECTIONS :

1) In a sauce pot, add quinoa & water. Get to a boil then lower to simmer and cover 15 min.

2) Remove from pot, add cooked quinoa to a sheet pan, add olive oil and bake at 400F for 12 min.

3) down. Season Wagyu steak. Season cast iron skillet with sesame oil. Heat skillet on high

4) Add steak & cook 2 min on each side. Remove from heat, let cool down.

5) Combine wet ingredients & aromatics(ginger/garlic/scallion) in a bowl.

6) Set aside. Thinly slice(1/8”) Wagyu against the grain, place into plate, pour marinate event over.

Top with scallions and crispy quinoa.

Wagyu Pizza
PIZZA DOUGH RECIPE:

‍2 cups flour

1 cup warm water 105-110 degrees F

1 TBS sugar

1 TBS active dry yeast

1 TBS olive oil

1 tsp salt

CARAMELIZED ONION JAM "SAUCE" RECIPE

2 Large Onions

1/4 Cup Granulated Sugar

2 Tbsp Balsamic Glaze

2 Tbsp Butter
PUMPKIN SPICED CREME BRÛLÉE with BOURBON
‍INGREDIENTS:

‍Mini Pumpkins for serving (as many as you need)

1 cup cooked pumpkin puree (1 small pumpkin)

2 tsp cinnamon

2 tsp ground ginger

1/2 tsp ground cloves

1/2 tsp nutmeg

1/4 tsp allspice1 vanilla bean

7 tbsp raw sugar1 cup milk

2 tbsp bourbon (or you can use a dark rum if you like too)

1 tsp salt

2 cups half-and-half cream

8 egg yolks
